I doubt I could name anyone who doesn’t like pastry. Pastry is practically the food version of gold; it’s golden in texture and makes you feel as though you’re indulging in luxury. Whether shortcrust, flaky or filo, a pastry treat can make any day feel that little bit better.

For most of us, I would assume, the idea of negotiating pastry is almost as daunting as pronouncing most of the words in the French dictionary. But there are little tricks and tools in the kitchenware industry that can make you look and feel like a Michelin star chef.

This little red and white box is the Icon Chef Pastry Pro, designed in Switzerland by Betty Bossi. It comes with three shapes: parcel, boat and pinwheel, and is one of the niftiest inventions for any amateur baker that I’ve ever seen. But let’s get to the food part!

The kind folks at Betty Bossi have put together some delicious recipes to have fun with at home with the help of your Pastry Pro. Thanks to my sweet tooth, I decided to share a dessert pastry recipe. Read, do and indulge. I will be.

Raspberry Boats

Preparation: Approx. 15 mins

Baking: Approx. 15 mins | Makes approx. 12 boats

INGREDIENTS

150 g raspberries

50 g sweetened condensed milk

50 g ground hazelnuts

1 portion tarte flambé mixture, rolled out (approx. 25 x 42 cm)

1 egg, beaten

½ bag dark cake glaze (approx. 60 g), melted

METHOD

  1. Preheat oven to 200ºC (convection)
  2. Mix the raspberries, condensed milk and hazelnuts
  3. Cut out the dough and fill. Lay the boats on a baking tray lined with baking paper
  4. Bake for approx. 15 min
  5. Remove from oven and place boats on a rack to cool
  6. Cut off a small corner of the cake icing bag. Pipe the glaze in a lattice pattern onto the boats
